Great healthy Dinner in a hurry...Soy-ginger Salmon with Couscous and Steamed Broccoli

This recipe is a hit with my boys and yes that includes my hubby. When you are in a hurry and still want to make a great dinner try this one.

Soy Ginger Salmon


1 Salmon fillet about 1.5-2 pounds
1/2 cup of extra virgin olive oil
1/4 cup plus 1 tablespoon of soy sauce
2 teaspoons of grated fresh ginger root
1 tablespoon of fresh rosemary chopped
Juice of one lemon or lime
Store bought couscous Near East brand Parmesan Flavor
Head of Broccoli
1-2 cups of water
2 tablespoons of vegetable oil

Preparation:

Preheat oven to 400 F

Take a measuring cup and add the 1/4 cup of ev olive oil, 1/4 cup plus a Tbsp of soy sauce, the ginger the rosemary and the lemon or lime juice.

Place the salmon in an oven safe container and pour marinade over the salmon let it marinate covered in plastic wrap for 30 minutes in the refrigerator. While this marinate prepare couscous follow box instruccions it will be done in about 7 minutes. Also cut the broccoli and have it ready to cook. This method to cook vegetables seems odd but try it the broccoli comes out great. To cook broccoli take a fry pan or saute pan with a lid and add 1-2 cups water until broccoli are floating add vegetable oil, add 1 teaspoon of salt and let it cook for about 6-8 minutes until the broccoli is bright green and has a little bit of a crunch. Drain the water out and while still hot add extra virgin olive oil or butter add salt to taste and garlic powder.

Bake the Salmon uncovered for 8-10 minutes (don't over cook it it will dry out) then turn on the broiler for about 5 minutes. It will come out moist, tender and slightly caramelized on top from the broiler, it's great!
