Meatballs with Apples and Spinach Patties, Kids Favorite!

This is one of my kids favorite dinner, its meatballs made a different way, and I even sneaked in some carrots and kale.  I hope your kids love this one too!!

Meatballs and Apples                                 

Ingredients

1 lb of ground beef or Bison beef, or ground pork. (you can combine 1/2 lb of beef and 1/2 lb of pork)

2 cups of chicken stock

1/2 a cup of grated carrots

1/4 cup of super fine chopped Kale

1/2 cup of Parmesano Reggiano

1/2 cup of breadcrumbs

3 eggs

1 small onion chopped small diced (tiny cubes)

2 minced garlic cloves

1/2 teapoon of chopped fresh rosemary

3 tablespoons of olive oil

Sauce and apples:

2 cups of chicken stock

1 tablespoon of brown sugar

1 cinnamon stick

1 appple of your choice but gala and granny smith work great (cut into cubes)

Salt to taste

Preparation:

Meatballs:

In a saute pan add some oil and saute the onions for 4 minutes then add garlic and let it cool a bit.  In a bowl mix parmesan cheese, chopped kale, carrots, 3 eggs, breadcrumbs,  onions garlic and salt.  Add ground meat and mix well, form the meatballs with a small ice cream scoop or a tablespoon measure so they are all the same size.  Shape them and refrigerate for 1/2 hour.


Heat a large saute pan add the 3 tablespoons of olive oil and cook meatballs for about 5 min on each side,  then remove them from the pan and set aside.  Add chicken stock and cinnamon stick and let it simmer for about 3 minutes, then add the brown sugar.  Add apples and cook for about 6-8 minutes add meatballs and simmer for 10 minutes at low-medium heat.   Garnish with fresh parsley.




Spinach Patties                                                                   


Ingredients:

1 1/2 lbs of baby spinach chopped small
3 eggs beaten
1/2 cup of parmesan cheese
1-2 tablespoons of All purpose flour
Salt to taste (Kosher)
1/4 cup to 1/2 cup of canola oil (depends of how big your pan is)
Cream cheese or sour cream to garnish (optional)

Preparation:

Mix chopped spinach with eggs, parmesan cheese and flour and salt.   In the meantime heat a non-stick pan and then add 1/2 cup of canola oil.   Take two spoons and and grab about 1 tablespoon amount and drop into pan once in the pan you can shape it, add 4-5 and cook for about 5 min on each side.  Once done place on a paper towel lined plate and add a triangle shape of cream cheese.
