Zucchini Fries

Here is a quick and healthy recipe to make as a side, appetizer or snack, kids love them too!  They are not crispy like potato fries they stay soft and buttery on the inside with a nice roasted flavor.  Be adventurous and try them!


Zucchini Fries                                         

4 servings 

Ingredients:

5  green Zucchini cut in half lengthwise then in strips (you may use yellow zucchini too)
3 tablespoons or extra virgin olive oil
Salt and pepper to taste
dried marjoram, thyme or herb's de provence

Preparation:

Preheat oven to 400 F

Cut Zucchini lenghtwise and dry well with paper towels.   In a sheet pan lined with aluminum foil or parchment paper add olive oil, marjoram, salt and pepper.   Toss them to coat well and make sure not to crowd them, you may need to  use 2 sheet pans.

Bake for 20-25 minutes until golden brown.
