How to make the best Rice "Arroz" ever

So many people ask me how to make rice??? They can't seem to get it right,  seems such a simple thing to make but this is one of those dishes that can be tricky if you don't follow a few rules.  My favorite rice to make is Jasmine rice it's aromatic and because it contains less starch it is more forgiving to cook.

Before you start, it is best to rinse the rice ( I don't always do it) but it is good to remove any talc added.  To Rinse place it in a strainer and rinse it until water runs clear.

Rice Rules:

  • Make sure you have a nice tight fitting lid
  • Once you cover the rice no peaking
  • Toast your rice
  • Only stir the rice after you add the water for a few times to help it settle, then don't stir anymore it will agitate the starches and your rice will be mushy.


Jasmine Rice Recipe


1 cup of white jasmine rice (rinsed)
3 tablespoons of grape seed oil or canola oil
1 teaspoon of kosher salt
2 cups of water

Brown Rice

1 cup of brown jasmine rice (rinsed)
3 tablespoons of oil
2 1/4 cups of water
1 teaspoon of kosher salt

Preparation:

In a sauce pan add your oil and turn heat to medium high, add rice, salt and sauté for 5 min, add water stir a couple of times to settle rice and let it simmer for 12 minutes if white rice, and 15-20 min if brown.   When the liquid is almost dry cover, and turn to low, steam for 12-15 if white, and 25-30 if making  brown.  Remove from heat open lid and fluff.
