Nile Moon Roasted Tilapia with Garbanzo Rice Salad and Avocado (30 min Dinner or Lunch)

For me Summer is a time of no complications, keeping it simple, skip a few steps and still shine.  This is a very fresh and healthy Lunch or Dinner with fresh and clean flavors that is perfect for summer time.

 My brother called to ask me for ideas for dinner, I gave him this recipe over the phone on the fly and he sent me his picture of how he plated it with a caption... "here is how I roll" I was so proud of him that had to share it. 



Nile Moon Roasted Tilapia with Garbanzo Salad and Avocado (30 min Dinner or Lunch)

Ingredients:

For the Fish:
4-6 fillets (1.5lbs to 2Lbs total) of Tilapia, Cod, or Halibut
3 tablespoons of flour, (for gluten free options: try coconut flour or fine grind almond flour
2 tablespoons of Nile Moon Rub if 4 fillets, if cooking 6 fillets use 2 1/2 tablespoons.
3 tablespoons of Olive Oil.

For the Rice Salad
  1 can of garbanzo beans
1 cup of cooked White Jasmine  or brown rice
1/2 cup of fresh chopped parsley/cilantro or Basil whichever you have on hand as long as its fresh Juice of 1 Lemon
1/2 cup of chopped of tomatoes
1 garlic clove minced
1/4 cup of olive oil
1/2 teaspoon of Kosher Salt
1/2 teaspoon of black pepper
1/4 teaspoons of turmeric (optional)
1/2 an avocado sliced into half moons

Preparation:

Preheat oven to 400F  and line a sheet pan with foil or parchment paper.
Place fish in a bowl and toss the fish with the flour
Place the fish on the sheet pan and sprinkle it well with the Nile Moon Rub
Drizzle the olive oil, until well coated
Sprinkle a dash of salt (optional I like a salty bite)

Cook it for 12 min if 4 fillets and 15-16 if 6 filets

Rice:

Cook your rice to bag instructions however I have a video on how to cook rice perfectly...

Preparation:
Keep the rice warm or reheat leftover rice, the hot/cold contrast on this salad is delightful
In a big bowl mix the rinsed garbanzo beans, chopped tomatoes, garlic, salt, pepper, turmeric, lemon, parsley, olive oil then add the rice in and toss well.
Garnish wit the sliced avocado, make sure to season it with salt and lemon juice.
