Romantic Menu for two

Tilapia Fish with Lemon Caper Sauce
Saute Asparragus with Butter
Mimosas
Strawberries dipped in Chocolate and sweetened whipped cream

Tilapia Fish with Lemon Caper Sauce

4 tilapia fillet
1/2 cup of All purpose flour
Salt and Pepper to taste
2 Tablespoons of canola or vegetable oil

For Sauce
2 teaspoons capers, drained and rinsed
4 tablespoons butter
1 small clove garlic, finely minced
2-3 tablespoons lemon juice
1 teaspoon lemon zest
Chopped fresh parsley

Preparation: Preheat oven to 300 degrees

Season the tilapia fillet with Salt and Pepper. In a shallow dish place flour, coat them with flour and shake the excess. Heat a saute pan 10-12" (med-high) once its heated add the canola or vegetable oil add the tilapia fillet and cook for about 4 min on each side until golden brown (do not overcook) Fish is cooked when it becomes opaque and its flaky if you overcook it will become dry. Set aside once its done. Turn down the heat to med-low and in the same saute pan add the 4 tablespoons of butter add the minced garlic, lemon juice and capers let it cook for about a minute then add chopped parsley and take off the heat. Pour this sauce over tilapia immediately and place the tilapia in a the oven for about 5-7 minutes to keep warm.

Asparragus:

1 bunch of Asparragus
3 tablespoons butter
Salt and Pepper to taste

Preparation:
Wash asparragus and trimm cut the ends where it snaps. Heat a saute pan to med-high once the skillet is hot then add the butter and the asparragus cover with a lid or with aluminum foil for about 3 minutes then remove lid add salt and pepper and let it cook for another 2 minutes until asparragus are bright green.


Mimosas Serves two

10 oz of your favorite orange juice
3/4 cup of white wine chardonay
1/2 cup of club soda
Serve in fluted glasses

*The original mimosas are orange juice and champagne however here is a more affordable way to make them. If you have a bottle of champagne laying around by all means make it. 10 oz of OJ and 3/4 cup of champagne.***

It's dessert time..
Strawberries dipped in Chocolate Ganache or Sweetened Whipped Cream

About 12 strawberries
3/4 cup of chocolate chips (semi-sweet or milk chocolate)
1/2 cup of heavy cream
1 tablespoon of unsalted butter
1 teaspoon of rum (optional)

Place the chocolate chips in a glass bowl. Bring heavy cream to a short boil immediately pour over chocolate chips and mix well. Let is stand at room temperature until ready to dip your strawberries.

Sweetened whipped cream: Makes about 1 1/2 cups

3/4 cup of heavy cream
2 tablespoons of powdered sugar
1 teaspoon of pure vanilla extract

Preparation:

Place a mixing bowl and mixer beaters in the freezer for 15 minutes. Combine all the ingredients in the bowl and beat at medium-low speed until the cream starts to thicken. Increase speed to medium and continue beating until the cream nearly doubles and forms soft peaks. If leftovers save it for up to two days in the covered in plastic wrap give it for the kids tomorrow or have another round the next night for you two.
